easy veggie fajitas


Veggie Fajitas

Extra virgin olive oil
Balsamic Vinegar
1 yellow onion, sliced
2 garlic cloves, minced
4 bell peppers (any color), sliced
2 large portobello mushrooms, sliced length wise
1 packet of organic fajita seasoning
1 can of organic spicy (or plain) black beans, drained and rinsed
Corn tortillas (warmed)
Salsa, for serving
Avocado, sliced

In a large sauté pan, heat a couple tablespoons of olive oil and add in onions, cook on medium heat for 6-8 minutes until onions are translucent and beginning to brown. Add in garlic, sauté for another minute then add in peppers and continue cooking. Meanwhile in another pan, sauté mushrooms in a tablespoon of olive oil for 8-10 minutes until cooked down and dark in color, deglaze the plan with a few heavy dashes of balsamic vinegar. Mix seasoning packet with a 1/4 cup of water and add into pepper pan. Toss everything together to coat and add in the mushrooms and black beans. Cook for another 5-10 minutes.

Warm tortillas in the microwave or oven. Spoon fajita filling onto tortillas, top with salsa and sliced avocado, and enjoy! 🙂
