farro fun

{ Farro is hands down my favorite grain. Tonight I decided to toss it with zucchini, asparagus, a little basil pesto, lemon zest, fruity olive oil, and flaked sea salt. This buttery yet healthy grain really shines when prepared the correct way, and fills you up with it’s wholesome goodness. My mom loves when I cook for her, and I think she was very impressed with our dinner tonight. I served the farro dish with sharp shards of parmesan (something I learned to adore at my internship) and chopped toasted walnuts. I also roasted halved brussels sprouts with whole cloves of garlic, evoo, and more of that delicious flakey fleur de sel. Delicious, and nutritious! }
