banana protein pancakes

{ I read Peanut Butter Fingers on an almost daily basis. I recently saw a recipe post about banana bread protein pancakes that seemed very healthy & simple to make. This morning I decided I wanted to try them, and they were de-lish! I never take the time to make pancakes for myself because I feel like it’s a mess so early in the morning and too much work. And I usually don’t opt for something heavy right when I wake up. But today was different, and these came together in a flash, literally just buzzed up the batter in my blender and boom I was half way done. The recipe only requires 5 ingredients! And you can get fancy like I did (because of a great suggestion from a friend) and slice up the other half of the banana, let it cook down with some maple syrup, and cinnamon for a pretty pancake topping. I also felt good about eating these because of the simple list of ingredients, and no refined sugar or flour was used! }

Banana Bread Protein Pancakes

Ingredients:

  • 1/2 cup old fashioned oats
  • 1/2 banana, mashed
  • 1/4 cup cottage cheese
  • 1 egg
  • 1/2 teaspoon cinnamon

Directions:

    1. Spray pan with cooking spray and heat to a medium heat
    2. Combine all ingredients in a blender and blend until smooth, about 2 minutes.
    3. Pour batter onto the warm pan to form three or four medium-sized pancakes
    4. Allow to cook until edges start to harden, about three minutes
    5. Flip pancakes and allow to cook until batter is no longer runny, about two more minutes
    6. Top with syrup (or the sliced banana, maple syrup, and cinnamon topping I described above) and enjoy!
