rainy day baking

today it rained for 15 hours in miami. normally i love reading and getting cozy during a storm (which i did), but it was a little excessive and gave me a heavy head. so i baked some cookies and procrastinated studying for finals even more. hot peanut butter cookie(s) + cold cookies and cream ice cream = headache gone and sugar coma induced!

peanut butter oatmeal cookies

1 cup unbleached flour
1 cup old fashioned oats
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup unsalted butter (i have been using Kerrygold butter lately and i’m really loving it)
1 cup brown sugar
1 large organic egg
1/3 cup peanut butter
1.5 cups peanut butter chips

Preheat oven to 350F. Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, oats, baking soda and salt.

In a large bowl, cream together butter and sugars until light. Beat in egg until smooth, then beat in the peanut butter. Slowly mix in dry ingredients. Mix in peanut butter chips.

Use an ice cream scoop to make dough balls and make sure they each have enough room to spread out and bake properly.
Bake for 11-13 minutes, until cookies are light golden around the edges. If anything, always under bake. For your cookies will continue baking for a few minutes on the hot pan even after you take them out of the oven.
